Jajamen is known as one of ‘Morioka’s three best noodles,’ alongside wanko-soba and cold noodles. Hakuryu, a long-established restaurant that started as a food cart, has been in business for about 60 years. The origins of ‘Jajamen’ are attributed to the founder, Kankatsu Takashina, who adapted the dish after experiencing ja-ja-men in Manchuria before the war. Then modifying it to suit the tastes of the Morioka community upon his return. (Taken from Hakuryu’s official website)

The secret miso paste—crafted with ground meat, sesame seeds, shiitake mushrooms, and over a dozen other ingredients in a miso base—pairs perfectly with the chewy, flat noodles, creating a flavor and texture combination that captures hearts from the first bite.

When visiting Jajamen Hakuryu, start with the famous Jajamen. Customize the flavor to your liking by adding vinegar, raayu, and garlic.

If you’re feeling adventurous, leave a little bit of noodle in the bowl. Crack an egg into the remaining noodles, stir it, and then ask the waiter for ‘Chiitan-tan.’ The dish will return with jaja noodle boiling water, green onions, and miso paste. Mix it well and enjoy the broth—its taste is distinct from the original Jajamen and delightfully addictive.
