Concept

Hitomaru Kadan is renowned as the premier ryotei ryokan in Akashi. It is celebrated for its specialty octopus kaiseki course, showcasing the fresh local ingredients of Akashi and the masterful skills of its chefs, offering kaiseki cuisine rich in seasonal flavors.

Founded in 1950, Hitomaru Kadan is a ryokan steeped in history. Its proprietress is a descendant of the Matsudaira family, and the ryokan has hosted distinguished guests, including members of the imperial family. Renowned mystery author Seicho Matsumoto also visited for research, leaving behind his handwritten guestbook as a treasured artifact.

Conveniently located near Akashi Station, the ryokan is a great base for sightseeing at Akashi Kaikyo Bridge and Awaji Island. Surrounded by nature, it offers a peaceful retreat away from urban noise. The ryokan features displays of the Matsudaira family crest, historical armor, Akashi pottery, and paintings, creating the ambiance of a small museum. A souvenir shop also offers Akashi specialties to take home.

Rooms

The guest rooms are traditional Japanese-style with a calm and refined atmosphere. A variety of room sizes are available to suit different needs. Seasonal touches, such as hanging scrolls and flower arrangements, showcase the changing seasons and enhance relaxation.

Some rooms are adorned with the hollyhock crest, adding a historical touch. All rooms are designed to ensure privacy and comfort, providing a luxurious escape from daily life.

The ryokan features a cypress grand bath and garden-style baths made of granite and marble, offering Arima no Yu, a renowned ferruginous salt spring. Known for its heat retention and moisturizing properties, the spring is said to help with nerve pain and cold sensitivity.

Cuisine

Hitomaru Kadan takes pride in its kaiseki cuisine, made with fresh, local ingredients. The head chef carefully selects seasonal ingredients to create dishes that are as visually appealing as they are delicious.

Signature dishes include Akashi Sea Bream, Octopus, and Conger Eel, which are considered the finest in Japan. These ingredients, sourced from the Akashi Strait (“Shikanose”), are prepared with skillful techniques, offering an unforgettable dining experience.

Day use plans are also available, allowing guests to enjoy the kaiseki cuisine and onsen without staying overnight.
